Grape Varieties: Grenache, Syrah, Cinsault
Wine Making: cold pre-fermentation. The vatting period is approximately 15 days. During this the temperatures are controlled maximum 25-26 C°.
Technical: The juices and then the wines are pumped up every day. At the beginning of fermentation, the juices are pumped up morning and evening once the volume of the tank. Depending on the vintage, shedding is practiced. At the end of vinification, the wines are lifted once to moisten the top of the cap with marc. The duration of maceration is defined by the tasting of the wines.
The marc is then devatted. Aging in vats. Bottling afterwards.
Tasting Recommendations: Temperature 15 – 16 °C
Pairing: Thai beef, roasted cod with honey, risotto with porcini mushrooms..
Ageing: 1-5 years
Available Bottling: 75cl and 150 cl
